A friend of mine shared this recipe with me.
It is really delicious.
1 cup quinoa
2 cups water
1/4 cup olive oil
2 Tbs. lime juice
2 Tbs. lime juice
1 tsp. cumin
1/2 tsp. red pepper flakes
1 can black beans, rinsed
1-1/2 cup cherry tomatoes cut in half
5 green onions finely chopped
1/4 cup fresh cilantro
salt and pepper to taste
Make quinoa according to directions, let cool. Mix olive oil, lime juice, cumin and red pepper flakes. Combine cooled quinoa, beans tomatoes and onions in large bowl. Drizzle dressing over salad and toss in cilantro. Season with salt and pepper.
